Christmas Eve Dinner – December 24th at 9:00 pm

Marboré Restaurant

An intimate evening, designed for those who enjoy tradition with a touch of sophistication. The Capon consommé with Jerez and spun egg opens the night with warmth and a homey aroma, while the crispy cannelloni of Graus sausage with gorgonzola and Williams pear combines the local with the gourmet.

The marine flavors of the warm lobster tartare with wakame seaweed and citrus caress the palate with freshness, preparing the ground for the delicacy of the low-temperature sea bass papieta with saffron and the intensity of the duck confit with sweet potato and dried figs. The sweet ending comes with a Jijona nougat cake that smells of childhood, lights and shared smiles.

Ideal for those who value tradition, family warmth and the simple pleasures of yesteryear.

Christams lunch – December 25th at 2:00 pm

Christmas is celebrated with the heart and the palate. This menu is designed for those who enjoy calm, attention to detail, and comforting flavors.

The smoked salmon bonbon with wakame seaweed and sesame awakens the appetite with marine and smoky notes; the crispy prawn with corn nuts and Huesca cheese cream surprises with textures and nods to the earth. Capon cannelloni with Spanish sauce and Parmesan crisp evokes old-fashioned recipes, while monkfish loin with mild garlic sauce and Carrila clams adds elegance and balance.

For lovers of tender roasts, try the slow-cooked lamb shoulder with glaze and smashed potatoes. it will be pure happiness. And for dessert, the nougat biscuit with hot chocolate, flaked salt and caramelized pineapple will add a sweet note to a day full of excitement.

New Year’s Eve Gala – December 31

Appetizers in the Cloister at 7:30 pm – Gala Dinner with live music

Saying goodbye to the year at the Monastery is an experience that goes beyond dinner: it’s a celebration with soul. The evening begins with a cocktail in the cloister, while the lights twinkle on the centuries-old stones and the sound of clinking glasses blends with live music.

The flavors of the gala invite wonder: from the pheasant Périgourdine soup with cured egg yolk to the Pyrenean trout with pesto and caramelized pine nuts, passing through the artisan duck mi-cuit with Golden apple and Pedro Ximénez or the Iberian pork brioche with sweet and sour strawberries. The flamed langoustine, hake with ratatouille and local cheese cream and Chateaubriand Wellington with Port and plums create a symphony of aromas, textures and colors that culminates with Passion for Chocolate, a perfect ending for those with a sweet tooth.
